Strawberry & Meringue Cheesecake

Barrier coated meringue is suitable for topping wet, or chilled desserts as it prevents the meringue from becoming soft and locks in the crunch. We’ve used a small cocoa butter coated meringue granule to top a strawberry cheesecake with a layer of strawberry compote jam. The granules remain crunchy and keep their shape and give a contrasting texture to a creamy smooth cheesecake.
