Christmas Chocolate Cornflake Cake

Taking a bakery classic and nudging it on to appeal to a different demographic, or adding a seasonal touch is a low risk approach to new product development.  Many bakers, or coffee shop chains offer Easter cornflake nests, bound with chocolate, and filled with mini chocolate eggs.  As an alternative, with sales potential across the lengthy Christmas selling period, we created Christmas cornflakes nests.  The cornflakes could be gluten free, or regular, mixed with dark chocolate, a touch of cinnamon for spice and decorated with gold dusted chocolate malt balls.

With 11.8% of food & beverage launches in 2015 featuring a gluten free claim, there is clearly a lot more consumer and manufacturer interest in gluten free than the percentage of diagnosed coeliacs suggests.  We have a separate sub category covering this requirement.

Application Ideas

  • Flaked cereals, individually, or in a mixture, are the staple of many breakfast cereals.
  • Crushed cornflakes give a crunchy texture to sweet or savoury coatings.
  • Mix with oats, puffed grains and fruit pieces to make a healthy choice cereal bar.
