Our bake stable fudges are made to withstand temperatures of up to 200°C in a conventional oven, for approx. 18-25 mins (product depending). This makes them perfect for inclusions inside short bakes such as cookies, cupcakes and muffins. Their specific recipe allows them to be baked into batters and doughs without melting too quickly or burning. The bake stability of the fudge is of course application dependent and we recommend consulting with our technical account management team to discuss particular processes.

Chocolate Millionaire's Cake

Millionaire’s shortbread is a classic combination of smooth milk chocolate, creamy caramel and a buttery shortbread biscuit.  Our Applications Chef has deconstructed the Millionaire’s shortbread ingredients as inclusions into a cake. Fudge cubes, golden stars and glitter, and dark chocolate chips combine to give the flavours of Millionaire’s shortbread in a totally different way.  These inclusions deliver texture, colour and flavour.
American style muffins are particular popular amongst the millennials, reflecting younger consumers’ general liking for sweeter flavours.

  • Use in pastries and sweet doughs for pockets of gooey caramel.
