Ancient Grain Yogurt Bites

Consumers are increasingly aware of ancient grains as a group of cereals and related products, and have increasing confidence in the benefits these products bring.  There is still a degree of education and stepwise introduction required.  NPD for snack and other food manufacturers could focus on well-understood items, with an ancient grain component.  These cereal bites with ancient grains are based on the cereal bar idea.  Using yogurt coating buttons to bind, we’ve rolled a variety of ancient grains – puffed, and flaked, with a mixture of inclusions such as fruit and vegetarian mallows into ancient grain bites.  Manufacturers can communicate the supplementary benefits of proteins, fibre, vitamins and minerals that ancient grains deliver.

Application Ideas

  • Boost cereal blends with flakes of amaranth, quinoa, millet or spelt.
  • Finish off cereal bars and refrigerator cakes with a sprinkling of ancient grain flakes or puffs.
  • For added protein and texture in cookies or muffins, use ancient grain flours, fibres and flakes.
